Hygiena potravín

The profile of the graduate of the study programme in food hygiene is formed during the six-year study mainly for professional activities in the field of state administration, in the Chamber of Veterinary Surgeons of the Slovak Republic, in the field of laboratory practice, in the private sphere of agriculture, food industry, pharmacy, etc., with undergraduate specialization in food hygiene.

The graduate acquires the biological laws of living nature in relation to agricultural production, becomes familiar with the chemical composition of living matter, its properties and manifestations, biochemical processes, physiology of organs and systems and with the differences of individual species of animals.

The theoretical subjects are followed by the application of the theoretical basis to the field of formation
and inheritance of health, physical, chemical and biological factors causing pathological changes. Emphasis is placed on extended questions, the importance and application of predictive microbiology in practice, toxicological aspects of drugs, substances used in DDD as well as plant protection and the penetration of contaminants into the food chain, as well as addressing environmental issues throughout the agro
complex.

The study includes a wide range of food disciplines such as general hygiene and food technology, food microbiology, plant food hygiene and additives, hygiene and technology of secondary raw materials, meat hygiene and technology, milk hygiene and technology, inspection of slaughter animals, hygiene and technology of poultry, eggs, fish, veterinary hygiene surveillance, and good human nutrition.

Graduates acquire knowledge, skill and training in clinical, infectious and invasive subjects.

The priority of the graduate of the food hygiene study program is to prepare and increase the knowledge level for the qualified use of health information, the ability to analyze risks along the entire chain from primary production to the consumer, to be able to solve problems operatively in relation to environmental factors and epidemiological as well as epidemiological situation.

In a food chain oriented towards food safety, he/she will be able to control monitoring, prevention, corrective actions and risk management throughout the food production process.

Proficient in waste-free food technologies, waste disposal options and risks, and actively involved in environmental protection and creation. He/she has knowledge of active protection of animal and human health, modern trends in rational nutrition and the possibilities of reducing health risks from food (alimentary diseases).

The study programme enables the graduate to work in agri-complex and related programmes, but also to further deepen his/her knowledge through postgraduate studies according to the individual specialisations.

In addition to the planned teaching at the university, students consolidate and deepen their theoretical knowledge and skills during professional practice in the food industry, state veterinary institutes, private food testing laboratories, regional veterinary administrations and through internships in clinics and private practices.



Prospects of graduates

The preparation of specialists of the above programme is aimed at acquiring deep professional knowledge, the necessary skills and knowledge to fulfil this professional focus and the graduate's application in practice:

  • perform food supervision of the production, handling and marketing of food of animal origin, in particular cut meat, venison, freshwater fish and their handling,
  • carry out food supervision in the commercial network,
  • issue certificates for milk production for dairy treatment and processing,
  • carry out inspection activities in recognised export food establishments,
  • carry out audits,
  • to carry out supervision in export food establishments,
  • to carry out food supervision of the production, handling and marketing of food of plant origin,
  • to carry out food supervision in establishments providing catering services,
  • to carry out food supervision of epidemiologically risky production activities in the case of food intended for particular nutritional purposes such as infant formula, delicatessen, confectionery, ice cream, water and others,
  • carry out laboratory testing of food in institutions involved in the investigation and control of food,
  • carry out epidemiological activities in veterinary and medical establishments,
  • manage the operation, technological processes of production and optimize hygienic conditions in food processing in food production organizations (meat, dairy, poultry, fat, freezing, canning, public catering, etc.),
  • plan, organise, supervise and carry out professional activities in the protection and creation of the environment in the region concerned,
  • organise and manage the hygiene and processing technology of food by-products from agriculture and the food industry,
  • direct the production of quality dairy raw material by applying the latest knowledge
    in agricultural primary milk production and direct sanitation work (cleaning, disinfection, disinsection and extermination) in agricultural primary production facilities and food processing plants,
  • perform detection of infectious and invasive disease agents,
  • graduate is qualified to carry out the activity of a veterinarian with the provision of diagnostic, therapeutic, consultative and preventive areas for diseases of farm, domestic and exotic animals,
  • perform various functions in sanitary and epidemiological, inspection, control
    and laboratory activities, as well as develop scientific, advisory and expert activities in the above-mentioned departments,

  • graduates can work in various professional and managerial positions in veterinary administration bodies, investigative and diagnostic facilities, environmental authorities, in professional departments of the Ministry of Defence and the Ministry of the Interior, as well as as managerial and professional staff in the field of quality and hygiene of food processing plants, as researchers in scientific and development institutions,
  • to work also in the European Union and other countries of the world in the field of veterinary medicine.

Conditions of admission

Admission to study at UVLF in Košice is conditional on obtaining a complete secondary education or a complete secondary vocational education and successfully passing the entrance examinations. The order of applicants will be determined on the basis of the number of points achieved in written tests in biology and chemistry and the evaluation of active participation in high school Olympiads and SOČ in profile subjects (biology, chemistry) and for other activities, which the student must provide in writing with the application form.



Conditions for international students

Admission conditions are the same as for Slovak applicants.
Another condition for foreign applicants to study in Slovak language is knowledge of Slovak language at least at B1 level. Candidates must prove their knowledge of the language by a certificate confirming their proficiency at the above level, or complete a Slovak language course organised by a third party for the needs of the UVLF in Košice before starting their studies.

The Slovak language level is not required for applicants with a prior knowledge of the language.
